Christmas
So this Sunday, we made gingerbread (after our delicious dinner of apricot chicken). It was fantastic! And we're going to make more this upcoming week for Christmas. We'll try to take pictures of the next batch in process and post them soon. Hope everyone is enjoying their Christmas traditions, especially the food.

This blog has not been forgotten. It has been temporarily postponed but that does not mean that we do not have a lot of great recipes that we have been making. Hopefully, we will get some of those up here. But for now, good luck cookin'!

Mint Oreo Ice Cream
1 1/2 cups of sugar
2 quarts half and half
1 pint heavy cream
2 teaspoons vanilla
2 teaspoons peppermint extract
pinch of salt
food coloring (if desired)
crushed Oreos
This recipe is very easy if you have an ice cream maker. Basically dump it all in the ice cream maker except the Oreos and turn it on. After about ten minutes mix in the Oreos. You may need to freeze it in the freezer even after the ice cream maker has finished. Enjoy!

Apricot Chicken
8-10 boneless, skinless chicken breasts (raw)
1 cup Russian dressing
1 cup apricot jam
1 packet onion soup mix
Cut chicken and mix all ingredients. Cook in 13x9 pan for an hour and a half covered with foil. Uncover for last half hour. Can precook chicken, then only cook for 45 min.
This is a very simple recipe. You really can't mess it up. Besides cutting the chicken, you really just have to let it cook. Serve it over rice. Dinner rolls and broccoli also go well with this chicken. If you want to make it gluten free, you can use Catalina dressing instead of Russian dressing. Enjoy!
